Apple Pie


1 Cup self raising flour
½ Tsp Ground cinnamon
3 Tbsp Butter
1 Tbsp Sugar
½ Tsp Ground almonds
3 Tbsp EasiYo Yoghurt
1 Tbsp Milk
4-5 Cups stewed apple (spiced if desired)
Extra milk to glaze
Place the flour and cinnamon into a mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs.
Stir in the sugar and ground almonds.
Mix the yoghurt with the milk and add to the mixture to make a soft dough.
Place the pastry in the fridge and chill for 30 minutes.
Preheat the oven to 220⁰C
Remove the dough from the fridge and roll out to 5mm thickness onto a lightly floured work surface. Place the stewed apple in a 23-25cm pie dish so that it almost reaches the top. Lay the pastry on top of the apple and press the edges with a fork to make a pattern.
Brush the pastry with a little milk and bake for 15-20 minutes or until golden brown.
