Creamy Avacado Dressing


1 ripe avocado
½ cup EASIYO Natural Yogurt
1 tablespoon tarragon vinegar
1 teaspoon prepared French mustard
Pinch cayenne pepper
½ teaspoon salt
Freshly ground black pepper


Peel avocado. Remove stone. Place avocado flesh in the bowl of a food processor with yogurt, vinegar, mustard and cayenne pepper. Process until smooth. Season with salt and pepper. Serve within an hour.


Serve this delicious dressing with nachos, tacos and other Mexican dishes or crisp green or tomato and corn salads.

Makes about 1 cup.  An electric blender will give superior results
