Leeks in Yoghurt Sauce

2 Tbsp Lemon juice
2 Sprigs of fresh Thyme
2 Sprig of Parsley
Salt & ground pepper
Grated rind of ½ lemon
4 Leeks trimmed and sliced
For the Sauce;
1 ¼ cups of EasiYo Yoghurt
1 Tsp Mild mustard
4 Egg yolks, beaten
1 Tbsp Lemon juice
Salt & ground pepper
In a saucepan combine the lemon juice, parsley, lemon rind, thyme and salt & pepper along with 2 ½ cups of water. Bring to the boil and simmer for 10 minutes. Strain.
Place the leeks in a saucepan and pour over the lemon stock.
Bring to the boil, cover and simmer for 10-15 minutes or until the leeks are tender but not mushy.
Drain and arrange on a serving dish.
To make the sauce, combine all the ingredients in the top of a double boiler and cook stiring over just simmering water until the sauce thickens.  This will take 10-15 minutes.
Pour over the leeks and serve.
