Onions Baked with Yoghurt




Ingredients;

½ Cup Chicken or vegetable stock
1 Cup EasiYo Yoghurt
60g Butter
4 Large Onions
½ Cup grated cheese
3 Egg yolks
¼ cup fresh breadcrumbs
 
Method;
 
Put the stock, butter and onions into a saucepan, cover and simmer for 20 minutes.
 
Drain and lay the onions in a greased, shallow ovenproof dish.
 
Mix the egg yolks with yoghurt and salt and pepper.
 
Pour the mixture over the onions to cover them and sprinkle with the cheese and breadcrumbs.
 
Bake in a preheated moderate oven at 180⁰C for 20 minutes or until the topping is set and golden brown.
