Potato Bake




Ingredients;

25g Butter
¼ Cup of cream
4 Large potatoes, peeled and finely sliced
¾ Cup EasiYo Yoghurt
Salt & pepper to taste
4 Tbsp Parmesan Cheese, grated
 
Method;
 
Butter a shallow ovenproof dish.
 
Dry the potato slices thoroughly and cut the butter into small pieces.
 
Carefully arrange the potato slices in layers in the dish placing a knob of butter between each layer.
 
Whisk together the yoghurt and cream and pour over the potato slices.
 
Season with salt and pepper and sprinkle the top with the cheese.
 
Bake in a preheated moderate oven for around 45 minutes or until tender and golden brown.
